Magic Cookie Bars

Ingredients
For the crust
- 2 cups graham cracker crumbs
- ½ cup (115 g) unsalted butter, melted
- 2 tablespoons granulated sugar
- Pinch of salt
For the layers
- 1 can (14 oz / 397 g) sweetened condensed milk
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
- 1 cup shredded sweetened coconut
- 1 cup chopped walnuts or pecans
- ½ cup white chocolate chips, optional
Instructions
- Preheat the oven to 350°F (175°C). Line a 9 × 13-inch (23 × 33 cm) baking pan with parchment paper, leaving some overhang on the sides.
- Make the crust. Mix the graham cracker crumbs, melted butter, sugar, and salt until the mixture resembles wet sand.
- Press the crust firmly and evenly into the bottom of the prepared pan. Use the bottom of a measuring cup or glass to really compact it.
- Add the condensed milk. Slowly drizzle the sweetened condensed milk evenly over the graham cracker crust. Try to cover as much of the surface as possible.
- Add the chocolate chips. Sprinkle the semi-sweet chocolate chips evenly over the condensed milk.
- Add the butterscotch chips in an even layer.
- Add the coconut. Sprinkle the shredded coconut across the top.
- Add the nuts. Scatter the chopped walnuts or pecans evenly over everything.
- Finish with white chocolate chips, if using.
- Bake for 25–30 minutes, or until the edges are golden brown and the coconut has started to toast. The center may still look slightly soft—that’s okay.
- Cool completely. Let the bars cool in the pan for at least 1–2 hours. For especially clean slices, refrigerate them for 30–60 minutes after cooling.
- Slice and serve. Use the parchment-paper overhang to lift the entire slab from the pan, then cut into squares or bars.
Tips for Perfect Magic Cookies
- Press the crust firmly. This keeps it from crumbling when you cut the bars.
- Don’t use evaporated milk. Sweetened condensed milk is what makes these bars rich and gooey.
- Let them cool completely. Cutting them while warm can make the layers fall apart.
- Don’t overbake. The bars should be golden around the edges but still slightly soft in the center.
- For extra chocolate flavor, use dark chocolate chips instead of semi-sweet.
- For a chewy texture, use sweetened shredded coconut.
- Toasting the nuts beforehand gives the bars an even deeper flavor.
Easy Variations
Chocolate Coconut Magic Bars: Use dark chocolate chips and extra coconut.
Peanut Butter Magic Bars: Replace the butterscotch chips with peanut butter chips.
S’mores Magic Bars: Add mini marshmallows during the last 5 minutes of baking and sprinkle crushed graham crackers on top.
Caramel Magic Bars: Add ½ cup caramel bits along with the chocolate chips.
Nut-Free Magic Bars: Simply leave out the nuts and add another ½ cup of chocolate or butterscotch chips.
Storage
Keep the bars in an airtight container at room temperature for about 3 days, or refrigerate them for up to 1 week. They can also be frozen for up to 2–3 months. Let frozen bars thaw in the refrigerator before serving.
