No-Bake Eclair Cake

A creamy, dreamy no-bake éclair cake made with layers of graham crackers, vanilla pudding, whipped topping, and a rich chocolate glaze. It tastes like a classic chocolate éclair but requires no oven and no pastry dough.

Ingredients

For the creamy filling

  • 2 boxes (3.4 oz / 96 g each) instant vanilla pudding mix
  • 3 cups cold whole milk
  • 1 container (8 oz / 225 g) whipped topping, thawed
  • 1 teaspoon vanilla extract

For the layers

  • 1–2 boxes (14–16 oz / 400–450 g) graham crackers
  • 1 cup sliced strawberries, optional
  • ½ cup mini chocolate chips, optional

For the chocolate topping

  • ½ cup (100 g) granulated sugar
  • ¼ cup (60 ml) milk
  • ¼ cup (55 g) unsalted butter
  • ¼ cup (25 g) unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

1. Make the pudding mixture

Pour the cold milk into a large mixing bowl.

Add both packages of instant vanilla pudding mix.

Whisk for about 2 minutes, until the mixture thickens.

Add the vanilla extract.

Gently fold in the whipped topping until the mixture is smooth, light, and fluffy.

Don’t vigorously stir after adding the whipped topping—you want to keep the filling airy.

2. Prepare the pan

Use a 9 × 13-inch (23 × 33 cm) baking dish.

Lightly grease the bottom or line it with parchment paper if you want easier cleanup.

3. Make the first graham cracker layer

Arrange graham crackers across the bottom of the dish.

Break some crackers into smaller pieces as necessary to fill the gaps.

Try to create a reasonably even layer.

4. Add the pudding layer

Spread approximately half of the pudding mixture evenly over the graham crackers.

Use a spatula to smooth the surface.

If using sliced strawberries, scatter a few over the pudding layer.

5. Add another graham cracker layer

Place another layer of graham crackers over the pudding.

Press them down very gently so they sit evenly.

Don’t press hard or the filling will squeeze out around the edges.

6. Add the remaining filling

Spread the remaining pudding mixture over the second layer of graham crackers.

Smooth the top with a spatula.

7. Add the final graham cracker layer

Finish with one more layer of graham crackers.

Arrange them as evenly as possible because this will become the base for your chocolate topping.

Make the Chocolate Topping

8. Combine the ingredients

In a small saucepan, combine:

  • Sugar
  • Milk
  • Butter
  • Cocoa powder
  • Salt

Place over medium heat.

Whisk constantly until the butter melts and the mixture becomes smooth.

9. Cook the chocolate glaze

Bring the mixture to a gentle boil.

Continue cooking for about 1–2 minutes, stirring constantly.

Remove from the heat.

Stir in the vanilla extract.

Allow the glaze to cool for approximately 5–10 minutes.

You want it warm and spreadable, but not piping hot.

10. Add the chocolate topping

Pour the chocolate glaze over the top layer of graham crackers.

Spread it evenly with a spatula.

Work fairly quickly because the glaze will begin to thicken as it cools.

11. Refrigerate

Cover the dish tightly with plastic wrap or foil.

Refrigerate for at least 8 hours, preferably overnight.

This is an important step.

The graham crackers need plenty of time to soften and absorb moisture from the creamy filling.

After chilling, they become wonderfully cake-like and tender.

12. Slice and serve

Cut the éclair cake into squares.

For cleaner slices, use a sharp knife and wipe it clean between cuts.

Serve chilled.

Tips for the Best Eclair Cake

Let it chill overnight

While you can technically serve it after several hours, overnight refrigeration produces the best texture.

The crackers become soft and cake-like without turning completely mushy.

Don’t make the chocolate glaze too hot

If the glaze is piping hot when poured over the crackers, it can soften them too quickly and become difficult to spread.

Let it cool slightly first.

Use cold milk

Cold milk helps the instant pudding set quickly and properly.

Don’t skimp on the crackers

You want complete layers. Small broken pieces can be used to fill gaps.

Easy Variations

Chocolate Eclair Cake

Use chocolate instant pudding instead of vanilla.

Add chocolate chips between the layers for even more chocolate flavor.

Strawberry Eclair Cake

Add thinly sliced strawberries between the pudding layers.

You can also replace the vanilla pudding with cheesecake-flavored pudding.

Banana Eclair Cake

Add thinly sliced bananas between the pudding and graham cracker layers.

A drizzle of caramel sauce makes this version especially delicious.

Peanut Butter Eclair Cake

Whisk ½ cup creamy peanut butter into the pudding mixture before folding in the whipped topping.

Finish with chocolate glaze and chopped peanuts.

Coconut Eclair Cake

Fold 1 cup sweetened shredded coconut into the filling.

Sprinkle toasted coconut over the chocolate topping.

Quick Chocolate Ganache Topping

If you’d rather use a richer chocolate topping, combine:

  • 1 cup chocolate chips
  • ½ cup heavy cream

Heat the cream until steaming, pour over the chocolate chips, and let stand for 2 minutes.

Stir until completely smooth.

Let it cool slightly, then spread over the top of the éclair cake.

This produces a softer, fudgier chocolate topping.

Storage

Keep the éclair cake covered in the refrigerator.

It will stay fresh for approximately 4–5 days.

The texture becomes even softer and more flavorful after the first day.

For the best presentation, add fresh berries or whipped cream just before serving rather than before storing.

Make-Ahead

This is an excellent make-ahead dessert.

Prepare it the day before serving, cover tightly, and refrigerate overnight.

When you’re ready to serve, simply slice and decorate with whipped cream, strawberries, chocolate shavings, or a dusting of cocoa powder.
