These golden puff pastry twists are filled with seasoned ground beef and melted cheese, then baked until crisp and flaky. They’re perfect as an appetizer, party snack, lunchbox treat, or easy family dinner.

Ingredients

For the beef filling

  • 1 lb (450 g) ground beef
  • 1 tablespoon olive oil
  • ½ small onion, finely diced
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon Italian seasoning
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons water
  • 2 tablespoons fresh parsley, chopped

For the pastry

  • 1 package (17.3 oz / 490 g) frozen puff pastry, thawed
  • 1½ cups (150 g) shredded cheddar cheese
  • ½ cup (50 g) shredded mozzarella cheese
  • 1 large egg
  • 1 tablespoon water

  • 1 tablespoon sesame seeds
  • 1 tablespoon poppy seeds
  • ½ teaspoon dried parsley
  • Pinch of red pepper flakes
  • Grated Parmesan cheese

Instructions

1. Thaw the puff pastry

Remove the puff pastry from the freezer and allow it to thaw according to the package instructions.

Keep it cool rather than letting it become warm and sticky.

If the pastry becomes too soft while you’re working, place it in the refrigerator for 10–15 minutes.

2. Cook the beef

Heat the olive oil in a large skillet over medium-high heat.

Add the diced onion and cook for about 2–3 minutes, until softened.

Add the ground beef.

Cook for 5–7 minutes, breaking it apart with a wooden spoon until browned and fully cooked.

Drain any excess grease if necessary.

3. Season the filling

Add the garlic, salt, black pepper, paprika, oregano, Italian seasoning, tomato paste, and Worcestershire sauce.

Stir well and cook for another 1–2 minutes.

Add the water and stir until the mixture becomes slightly saucy.

Remove from the heat and stir in the parsley.

Allow the beef mixture to cool for 10–15 minutes.

This is important because putting hot beef onto puff pastry can cause the butter in the pastry to melt before baking.

4. Prepare the pastry

Preheat the oven to 400°F (200°C).

Line two baking sheets with parchment paper.

Lightly flour your work surface and gently unfold the puff pastry.

If necessary, roll it slightly to smooth out the creases.

5. Add the cheese

Spread the cooled beef mixture evenly over one sheet of puff pastry.

Leave about ½ inch (1 cm) around the edges.

Sprinkle the cheddar and mozzarella evenly over the beef.

Place the second sheet of puff pastry over the filling.

Gently press the top layer down so it adheres to the filling.

6. Cut the twists

Using a sharp knife or pizza cutter, cut the pastry into strips approximately 1 inch (2.5 cm) wide.

You should get around 12–16 strips depending on how large you want the twists.

Carefully pick up each strip and twist it several times.

Don’t worry if some of the filling becomes visible—that actually gives the finished twists a delicious rustic appearance.

7. Arrange on the baking sheet

Place each twist on the prepared baking sheet, leaving about 1–2 inches between them.

If the pastry has become soft, refrigerate the twists for about 10 minutes before baking.

Cold puff pastry generally produces a better rise and crispier layers.

8. Add the egg wash

In a small bowl, whisk together the egg and 1 tablespoon of water.

Brush the egg wash lightly over each pastry twist.

Don’t use too much or it can pool between the pastry layers.

Sprinkle with sesame seeds, poppy seeds, Parmesan, dried parsley, or red pepper flakes if desired.

9. Bake

Bake for 18–22 minutes, or until the puff pastry is beautifully puffed and deep golden brown.

If you’re baking two trays at once, rotate the trays halfway through baking.

The pastry should be crisp and golden on the outside.

10. Cool slightly

Allow the twists to cool on the baking sheet for 5–10 minutes before serving.

The cheese will be extremely hot straight from the oven.

Tips for Extra-Crispy Twists

Keep the pastry cold. If it becomes soft or greasy while you’re assembling the twists, refrigerate it before baking.

Cool the beef completely. Warm filling can make the pastry difficult to handle and prevent it from puffing properly.

Don’t overload the filling. Too much beef and cheese can cause the twists to open during baking.

Use freshly shredded cheese. It melts more smoothly than many pre-shredded cheeses.
