Crispy, golden puff pastry wrapped around savory seasoned ground beef and melted cheese, twisted into irresistible finger food. Perfect as an appetizer, snack, party food, or lunchbox treat.
Makes: 12–16 twists
Prep: 20 minutes
Bake: 18–22 minutes
Ingredients
Beef filling
250 g ground beef
1 teaspoon olive oil
½ small onion, finely chopped
2 cloves garlic, minced
½ teaspoon paprika
½ teaspoon ground cumin
¼ teaspoon black pepper
¼ teaspoon chili flakes — optional
½ teaspoon salt
1 tablespoon tomato paste
1 tablespoon water
1 tablespoon chopped fresh parsley or coriander
Pastry
1 sheet puff pastry, approximately 250–300 g, thawed but still cold
100 g shredded cheddar cheese
50 g shredded mozzarella
1 egg, beaten, for brushing
1 tablespoon sesame seeds — optional
½ teaspoon dried oregano — optional
Method
1. Cook the beef
Heat the olive oil in a skillet over medium heat.
Add the chopped onion and cook for 2–3 minutes until softened.
Add the garlic and cook for another 30 seconds.
Add the ground beef and cook for 5–7 minutes, breaking it apart with a spatula until completely browned.
Add the paprika, cumin, black pepper, chili flakes, salt, and tomato paste.
Stir well and cook for another 1–2 minutes.
Add the water and cook for another minute until the mixture is moist but not watery.
Remove from the heat and stir in the parsley or coriander.
Important: Allow the beef mixture to cool completely before putting it on the puff pastry. Hot filling can melt the pastry and make it difficult to twist.
2. Prepare the puff pastry
Preheat the oven to 200°C / 400°F.
Line a baking tray with parchment paper.
Place the cold puff pastry on a lightly floured surface.
If necessary, gently roll it into a rectangle approximately 3–4 mm thick.
3. Add the beef and cheese
Spread the cooled beef mixture evenly over half of the pastry.
Sprinkle the cheddar and mozzarella evenly over the beef.
Fold the empty half of the pastry over the filling, creating a sandwich-like rectangle.
Gently press the top down so the layers hold together.
4. Cut and twist
Using a sharp knife or pizza cutter, cut the pastry into strips approximately 2 cm wide.
Take one strip and gently twist it several times.
Place it on the prepared baking tray, leaving a little space between each twist.
Don’t worry if some cheese or beef becomes visible—that will create delicious crispy edges.
5. Egg wash
Brush each twist lightly with beaten egg.
Sprinkle with sesame seeds and/or dried oregano if desired.
For extra cheesiness, add a small amount of grated Parmesan on top.
6. Bake
Bake at 200°C / 400°F for 18–22 minutes, or until the pastry is:
Golden brown
Puffy
Crisp on the edges
Fully cooked through
If the tops are browning too quickly, reduce the oven temperature slightly.
Allow the twists to cool for 5 minutes before serving.
🥣 Quick dipping sauce
Mix together:
½ cup mayonnaise
2 tablespoons ketchup
1 teaspoon mustard
½ teaspoon smoked paprika
1 teaspoon lemon juice
Pinch of black pepper
Mix until smooth and serve alongside the warm twists.
⭐ Tips for perfect twists
Keep the puff pastry cold. If it becomes soft or sticky, refrigerate it for 10–15 minutes before cutting.
Cool the beef completely before assembling.
Don’t use too much filling; excessive filling can cause the twists to open during baking.
Seal the folded pastry gently before cutting.
For maximum crispiness, bake directly from the refrigerator.
You can substitute the beef with cooked chicken, minced lamb, or finely chopped leftover roast beef.
🧊 Make-ahead option
Assemble and twist the pastries, place them on a lined tray, and refrigerate for up to 24 hours before baking. Brush with egg immediately before putting them in the oven.
You can also freeze the unbaked twists. Freeze them on a tray first, then transfer them to an airtight container. Bake from frozen, adding approximately 5–8 minutes to the baking time.
