A creamy, no-bake dessert made with layers of fresh strawberries, vanilla biscuits, and lightly sweetened whipped cream. After chilling overnight, the biscuits soften into a delicious cake-like texture.

Chilling: 6 hours or overnight

Ingredients
Strawberry filling
500 g fresh strawberries
2 tablespoons sugar
1 teaspoon lemon juice
Β½ teaspoon vanilla extract
Cream layer
500 ml cold heavy whipping cream
Β½ cup (60 g) powdered sugar
1 teaspoon vanilla extract
115 g cream cheese, softened β€” optional, for a firmer filling
Cake layers
250–300 g vanilla wafers, digestive biscuits, or graham crackers
Β½ cup strawberry jam β€” optional
Method
1. Prepare the strawberries

Wash and dry the strawberries thoroughly.

Remove the green tops and slice the strawberries thinly.

Place about β…” of the strawberries in a bowl with the sugar, lemon juice, and vanilla.

Gently mix and let them sit for 10–15 minutes. This allows the strawberries to release some of their juices and become more flavorful.

Reserve the remaining strawberries for decorating the cake.

2. Make the whipped cream

Pour the cold heavy cream into a large mixing bowl.

Add the powdered sugar and vanilla.

Beat with an electric mixer on medium-high speed until soft to medium peaks form.

If using cream cheese, beat it separately until smooth, then gently fold it into the whipped cream.

Don’t overbeatβ€”the cream should remain smooth and spreadable.

3. Prepare the dish

Use an 8 Γ— 8-inch (20 Γ— 20 cm) or similar deep baking dish.

Spread a very thin layer of whipped cream over the bottom. This helps keep the first layer of biscuits in place.

4. Build the first layer

Arrange the vanilla wafers or biscuits in a single layer over the cream.

Break a few biscuits if necessary to fill the gaps.

Spread approximately ΒΌ of the whipped cream over the biscuits.

Add a layer of sliced strawberries.

For extra strawberry flavor, drizzle a few teaspoons of strawberry jam over the strawberries.

5. Repeat the layers

Continue layering:

Biscuits β†’ whipped cream β†’ strawberries β†’ biscuits β†’ whipped cream β†’ strawberries

Finish with a generous layer of whipped cream on top.

Smooth the surface with a spatula.

6. Decorate

Arrange the reserved fresh strawberries over the top.

You can also add:

White chocolate shavings
Crushed biscuits
Fresh mint
A drizzle of strawberry sauce
7. Chill

Cover the dish tightly with plastic wrap.

Refrigerate for at least 6 hours, but overnight is best.

During this time, the biscuits absorb moisture from the cream and strawberries and become soft, giving the dessert its characteristic cake-like texture.

For an extra-pretty finish, combine:

150 g sliced strawberries
1 tablespoon strawberry jam
1 teaspoon warm water

Gently mix and spoon over the cake immediately before serving.

⭐ Tips for the best icebox cake
Use very cold whipping cream for the best volume.
Dry the strawberries well after washing so they don’t introduce excess water.
Don’t make the strawberry slices too thick.
Overnight chilling gives the best texture.
For clean slices, refrigerate overnight and use a sharp knife.
If you prefer some crunch, reserve a few biscuits and sprinkle the crushed pieces over the cake just before serving rather than adding them before chilling.

Keep refrigerated and consume within 2–3 days for the best texture and freshness.
