If you’re looking for a recipe for golden-brown, crispy patties, here’s a versatile version using potatoes and vegetables.
🥔 Golden-Brown Crispy Patties
Makes: 8–10 patties
Prep: 20 minutes
Cook: 15–20 minutes
Ingredients
500 g potatoes
1 small carrot, grated
½ small onion, finely chopped
½ cup sweet corn or peas
½ cup shredded cheddar cheese
1 egg
3 tablespoons breadcrumbs
2 tablespoons fresh coriander or parsley, chopped
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon black pepper
½ teaspoon salt
2–3 tablespoons oil, for frying
Method
Cook the potatoes: Peel and boil the potatoes until fork-tender, about 15–20 minutes. Drain thoroughly and allow them to cool slightly.
Mash: Mash the potatoes until mostly smooth. Avoid adding milk or butter because the mixture needs to remain firm.
Combine: Add the grated carrot, onion, corn or peas, cheese, egg, breadcrumbs, herbs, garlic powder, paprika, pepper, and salt. Mix until everything is evenly combined.
Shape: Divide the mixture into 8–10 portions. Shape each into a firm patty about 1–1.5 cm thick.
Chill: Refrigerate the patties for 20–30 minutes. This helps them hold their shape and become crispier when fried.
Fry: Heat oil in a non-stick skillet over medium heat. Place the patties in the pan without overcrowding.
Cook for 3–4 minutes per side, or until deeply golden-brown and crispy.
Transfer to a paper-towel-lined plate to remove excess oil.
🔥 Secret to extra-crispy patties
Make sure the potatoes are well drained and not watery. Also, don’t flip the patties too often—let each side develop a golden crust before turning.
Serve hot with garlic yogurt sauce, ketchup, chili sauce, or a fresh cucumber salad.
